At 802 Coffee, we're always eager to try coffee from origins that are less common in the specialty world and the Dominican Republic falls in that category. This organic coffee comes from the family-operated Ramirez Estate. The estate endeavors to be a conscientious neighbor through support of local schools, helping Haitian immigrants with citizenship for higher wages, and using fermented coffee cherries to produce their own natural gas power.
This lot is red honey processed with a 24 hour fermentation. In the cup we tasted fudge and cocoa nibs, red apple, caramel, and loads of dried fruits like cranberries and golden raisins. The body is thick and rich but still with a crisp finish. In fact, this would probably be a delicious pairing with a steaming bowl of oatmeal topped with maple syrup, nuts, and craisins. Makes getting up in the morning sound lovely!
